INGREDIENTS
6 oz Lean Roasted Ham
1 medium Carrot
1 medium Parsnip
1 tsp Extra Virgin Olive Oil
1 tsp Honey
1 tbsp Fresh Rosemary
1 tbsp Fresh Thyme
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F.
Peel and cut the carrot and parsnip into bite-sized pieces. Place them on a baking tray.
Drizzle the vegetables with olive oil, and sprinkle with freshly chopped rosemary, thyme, salt, and pepper. Toss well to coat evenly.
Roast the vegetables in the oven for about 20-25 minutes, or until tender and slightly caramelized, stirring halfway through.
While the vegetables are roasting, slice the lean ham into 1/4-inch thick slices.
In a small bowl, mix honey with a pinch of salt and pepper. Lightly brush the honey glaze on both sides of the ham slices.
About 5 minutes before the vegetables are done, add the glazed ham slices to the baking tray to warm and allow the glaze to set.
Once everything is heated through and nicely roasted, remove from the oven. Plate the ham along with the roasted root vegetables and enjoy your balanced and flavorful meal.
