INGREDIENTS
6 oz Pork Tenderloin (170g)
1 medium Peach (150g)
1.5 tsp Extra Virgin Olive Oil (7.5g)
1 tbsp Fresh Rosemary
1 tbsp Fresh Thyme
1/2 tsp Garlic Powder
Salt and Pepper to taste
PREPARATION
Preheat oven to 400°F.
Pat the pork tenderloin dry with paper towels. Rub with olive oil, garlic powder, salt, and pepper.
Finely chop the fresh rosemary and thyme. Sprinkle the herbs evenly over the pork tenderloin.
Place the seasoned pork on a baking sheet. Slice the peach into wedges, discarding the pit, and arrange around the pork.
Drizzle any remaining olive oil over the peaches and pork.
Roast in the oven for 20-25 minutes or until the pork reaches an internal temperature of 145°F and the peaches are caramelized.
Remove from the oven, let rest for 5 minutes, then slice the pork and serve with the roasted peaches.
