INGREDIENTS
200g Shrimp (peeled and deveined)
200g Mixed Mushrooms
1 tbsp Unsalted Butter
2 cloves Garlic
1 tsp Lemon Juice
1 tbsp Fresh Parsley
PREPARATION
Rinse and pat dry the shrimp and mushrooms. Slice larger mushrooms for even cooking.
Mince the garlic finely and chop the parsley.
Heat a skillet over medium-high heat. Add the butter and allow it to melt until it begins to foam.
Add the minced garlic to the skillet and sauté briefly until fragrant, about 30 seconds.
Add the mixed mushrooms to the skillet, stirring occasionally. Sear them until they begin to brown and soften, about 3-4 minutes.
Push the mushrooms to the side and add the shrimp to the skillet. Sear the shrimp for about 2-3 minutes per side until they are opaque and slightly golden.
Mix the mushrooms and shrimp together, then drizzle the lemon juice over the medley.
Remove from heat and garnish with chopped parsley before serving.
