INGREDIENTS
1 medium Sweet Potato (150g)
1/2 medium Red Bell Pepper (75g)
1/4 medium Onion (30g)
1 tsp Olive Oil
1 Lean Turkey Sausage link (60g)
2 whole Eggs
2 Egg Whites
Salt and Pepper to taste
PREPARATION
Peel and dice the sweet potato into ½-inch cubes. Dice the red bell pepper and finely chop the onion.
Heat the olive oil in a non-stick skillet over medium heat. Add the diced sweet potato, and cook for about 5 minutes.
Stir in the bell pepper and onion, and continue cooking until the sweet potatoes are tender and slightly crispy on the edges, about 7-8 minutes in total. Season with salt and pepper.
In a separate pan, cook the lean turkey sausage link over medium heat until warmed through and lightly browned, then slice it into rounds.
In the same skillet or a separate one, fry the eggs by cooking 2 whole eggs and then adding 2 egg whites. Cook until the whites are set while keeping the yolks runny, or to your preference. Season with salt and pepper.
Plate the crispy sweet potato hash, top with the sliced turkey sausage and finished eggs. Enjoy your balanced, energy-boosting meal!
