INGREDIENTS
5 oz Salmon Fillet
1/2 medium Sweet Potato
2 tbsp Almond Flour
1 tsp Olive Oil
2 tbsp Fresh Herbs (Parsley, Dill, Thyme)
1 tsp Garlic Powder
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F.
Peel and cube the sweet potato. Toss the cubes lightly with olive oil, salt, and pepper, and spread them on a baking sheet.
Roast the sweet potato in the oven for 20-25 minutes until tender. Once roasted, transfer to a bowl and mash lightly with a fork or potato masher.
While the sweet potato is roasting, pat the salmon dry with a paper towel.
In a small bowl, combine almond flour, fresh herbs, garlic powder, salt, and pepper. Press this herb-almond mixture onto the top side of the salmon fillet.
Place the salmon on a separate, lightly oiled baking tray. Once the oven is ready, put the salmon in and bake for 12-15 minutes until the fish flakes easily with a fork.
Plate the salmon alongside a generous serving of the roasted sweet potato mash.
Serve immediately and enjoy your nutrient-packed meal.
