1 tbsp Ghee
2 cloves Garlic
1 sprig Fresh rosemary
1 sprig Fresh thyme
0.5 tsp Sea salt

12 spears Asparagus

PREPARATION
Pat the sirloin steak completely dry with paper towels and season both sides generously with sea salt and black pepper.
Heat a heavy cast-iron skillet over medium-high heat until very hot, then add half of the ghee to coat the pan.
Place the steak in the skillet and sear for 3-4 minutes without moving it to develop a deep golden-brown crust.
Flip the steak and add the remaining ghee, smashed garlic cloves, rosemary, and thyme to the pan.
Tilt the pan slightly and use a spoon to continuously baste the steak with the melting herb-infused ghee for another 3 minutes.
Remove the steak from the pan and let it rest on a cutting board for at least 5 minutes to lock in the juices.
In the same skillet, toss the asparagus spears in the remaining pan juices and sauté for 4-5 minutes until tender-crisp, finishing with a squeeze of lemon juice.
