Preheat your oven to 400°F and line a baking sheet with parchment paper.

While carrots roast, season the chicken breast with black pepper on both sides.
Heat the remaining 0.5 tablespoons of olive oil in a skillet over medium-high heat and sear the chicken for 6-7 minutes per side until fully cooked.
In a small bowl, whisk together the honey, tamari, and minced garlic.
Reduce the skillet heat to medium-low, pour the honey-garlic mixture over the chicken, and simmer for 2 minutes until the sauce becomes a thick glaze.
Remove from heat and serve the chicken alongside the roasted carrots, drizzling any remaining glaze from the pan over the top.
Garnish with chopped fresh parsley before serving.
