Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon served with garlic-sautéed green beans and creamy whipped cauliflower mash, finished with a squeeze of bright lemon.
INGREDIENTS
5.8 oz Wild Atlantic Salmon
1.5 cups Cauliflower florets
1 cup Green Beans
1 tsp Olive Oil
1 tsp Ghee
2 cloves Garlic
PREPARATION
Steam the cauliflower florets until they are very tender, about 10-12 minutes.
While cauliflower steams, pat the salmon fillet dry with a paper towel and season with salt and pepper.
Heat the olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until the edges are golden and crisp.
Remove the salmon from the pan and set aside to rest.
In the same skillet, add the green beans and minced garlic, sautéing for 5-6 minutes until the beans are crisp-tender.
Drain the steamed cauliflower and blend or mash it with the ghee until smooth and creamy.
Plate the salmon over the cauliflower mash with the garlic green beans on the side, finishing with a squeeze of fresh lemon if desired.
