1 cup Bell peppers

PREPARATION
Preheat your oven to 400°F.
Toss the sliced bell peppers with half of the olive oil and a pinch of the salt and pepper on a baking sheet.
Roast the peppers for 15 to 20 minutes until they are slightly charred and softened.
Season both sides of the steak with the garlic powder and the remaining salt and pepper.
Heat the rest of the olive oil in a heavy skillet over medium-high heat until shimmering.
Sear the steak for about 3 to 4 minutes per side for medium-rare, then remove from the pan to rest for 5 minutes.
Add the fresh spinach to the hot skillet and sauté for 1 minute until just wilted.
