Pan-Seared Salmon with Red Pesto Noodles
Pan-seared salmon fillet served over whole wheat noodles tossed in a vibrant, smoky roasted red pepper pesto.
INGREDIENTS
6 oz Salmon fillet
1 oz Dry whole wheat noodles
0.5 cup Roasted red peppers
0.5 tbsp Walnuts
1 tbsp Parmesan cheese
1 tsp Olive oil
1 clove Garlic
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tsp Lemon juice
PREPARATION
Bring a large pot of water to a boil and cook the whole wheat noodles according to package directions until al dente.
While the noodles are boiling, combine the roasted red peppers, walnuts, parmesan cheese, garlic, and half of the olive oil in a food processor.
Pulse the mixture until it forms a thick, slightly textured red pesto and set aside.
Pat the salmon fillet dry with a paper towel and season both sides evenly with sea salt and black pepper.
Heat the remaining olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the hot pan and sear for 4 to 5 minutes per side until the skin is crispy and the flesh is cooked through.
Drain the noodles and return them to the pot, then toss thoroughly with the prepared red pesto and lemon juice.
Divide the pesto noodles onto a plate and top with the pan-seared salmon fillet.
