INGREDIENTS
140g Non-fat Greek Yogurt
80g Low-fat Cottage Cheese
120ml Skim Milk
4g Unflavored Gelatin
70g Fresh Strawberries, sliced
70g Fresh Mango, diced
15g Rolled Oats
PREPARATION
In a small saucepan, gently heat the skim milk over low heat until warm but not boiling.
Whisk the unflavored gelatin into the warm milk until completely dissolved.
Pour the milk mixture into the bottom of a glass or bowl and refrigerate for at least 1 hour or until set into a jelly.
Place the cottage cheese and Greek yogurt into a blender and process until completely smooth and aerated.
Once the milk jelly is firm, spoon the creamy yogurt mixture over the top.
In a small dry skillet, lightly toast the rolled oats over medium heat for 2-3 minutes until fragrant.
Top the parfait with the sliced strawberries, diced mango, and the toasted oats for crunch.
