Dice the chicken breast into 1-inch cubes and season with half of the sea salt and black pepper.
Peel and chop the Yukon Gold potato into 1/2-inch cubes and finely dice the onion, carrots, and celery.
Heat olive oil in a large pot over medium heat, then add the onion, carrots, and celery, sautéing for 5 minutes until softened.
Stir in the minced garlic and dried thyme, cooking for 1 minute until the herbs release their earthy aroma.
Pour in the chicken broth and add the diced potatoes; bring the liquid to a boil, then reduce heat to low and simmer for 12 minutes.
