Pork and Mushroom Potato Pie
Sautéed ground pork and earthy mushrooms baked under a golden layer of thinly sliced potatoes and melted sharp cheddar cheese.
INGREDIENTS
7 oz Ground pork (93% lean)
4 oz Gold potato
1 cup Cremini mushrooms
0.25 oz Sharp cheddar cheese
0.25 cup Yellow onion
1 clove Garlic
0 tsp Extra virgin olive oil
0.25 tsp Sea salt
0.25 tsp Black pepper
0.25 tsp Dried thyme
PREPARATION
Preheat your oven to 400°F (200°C).
Heat the olive oil in a skillet over medium heat and sauté the diced onion and minced garlic until translucent.
Add the ground pork, sea salt, black pepper, and dried thyme to the skillet, breaking the meat apart and cooking until browned.
Stir in the sliced cremini mushrooms and cook for an additional 3-4 minutes until they begin to soften.
Transfer the pork and mushroom mixture into a small oven-safe baking dish, spreading it into an even layer.
Using a mandoline or sharp knife, slice the gold potato into very thin rounds and layer them across the top of the meat mixture like shingles.
Cover the dish tightly with foil and bake for 20 minutes to steam the potatoes.
Remove the foil, sprinkle the shredded sharp cheddar cheese over the potatoes, and return to the oven.
Bake for another 10-12 minutes until the potatoes are tender and the cheese is melted and bubbly.
