High-Protein Vegetarian Recipes: Give Your Beans a Partner

By the Solin teamPublished

Here are 15 meatless recipes from Solin's library, each with 30 g of protein or more. Beans and lentils are a good start, but a cup of cooked lentils only has about 18 g of protein. Add half a cup of firm tofu and you're at about 40 g for 411 calories. Greek yogurt, cottage cheese, eggs and tempeh work too.

Why beans need a partner

Beans and lentils have real protein. They just come with a lot of carbs, so the calories climb before the protein does. Getting 30 g of protein from cooked lentils alone takes about 1⅔ cups and 386 calories. That's doable, but it's a big bowl of lentils with nothing else in it yet.

Add a food that's mostly protein and the math changes fast.

You pair for grams, not for amino acids. A 2019 review in Nutrients found that vegetarians usually get more than enough of every amino acid, as long as they eat a reasonable variety of foods and enough food overall.

Recipes where tofu or tempeh does the work

Tofu and tempeh are the easiest way to a big meatless lunch or dinner, and they don't need beans to get there. Each recipe here is a single serving, made by a Solin member with Solin's AI.

Recipes that give beans a partner

These start with beans, lentils or chickpeas and add tofu, eggs or dairy to get past 30 g. The burgers bind black beans with egg whites. The macaroni bake uses pasta made from chickpeas and a cup of cottage cheese for the sauce.

Solin's whole recipe library follows the same pattern. Of its newest 5,000 or so recipes, about 1,300 are meatless single servings. Most are breakfasts and desserts, but look at the 143 lunches and dinners: 77 use tofu or tempeh, and 86 use beans, lentils or chickpeas. And of the 114 recipes with beans in them, all but 5 also use tofu, tempeh, seitan, eggs, dairy or protein powder.

Breakfast, snacks and dessert don't need beans

Morning is the easy part. Egg whites, Greek yogurt and cottage cheese can get you to 30 g on their own, like the first two below. The other four add protein powder.

A 100 g day, with beans in it

"It's SO hard to consume 100g of protein a day as a vegetarian," someone on r/vegetarianrecipes wrote. It gets easier when each meal does its share. Here's one way to do it with three recipes from above:

That's 111 g of protein for 924 calories, which leaves plenty of room for fruit, snacks and the rest of your day. It's an example, not a number you have to hit.

Why three meals and not one huge one? For people who lift (we hope that's you), the International Society of Sports Nutrition suggests 20 to 40 g of protein at a time, every 3 to 4 hours through the day.

What are 10 vegetarian foods that are high in protein?

Ranked by how much protein you get in 100 calories: egg whites (21 g), nonfat Greek yogurt (17 g), 2% cottage cheese (13 g), firm tofu (12 g), tempeh (11 g), edamame (10 g), whole eggs (9 g), lentils (8 g), black beans (7 g) and chickpeas (5 g). The first six make the best partners for beans.

How do I get 120 g of protein a day as a vegetarian?

Start from the 111 g day above and swap the ginger soy tofu dinner for the spicy tofu and broccoli stir-fry. That's 50 g at dinner instead of 38, and about 123 g for the day. Or keep the day as it is and add the chocolate yogurt mousse cups as a snack, for about 145 g.
